"I was born and raised in Vagliagli, a small village in the heart of Chianti Classico Senese. My grandparents worked the land their entire lives and my parents transmitted their love of the land and the food, wine and good humor that comes with it... They have passed on to me many secrets that they have learned from their mothers and grandmothers. Few ingredients are necessary, good, fresh. extra-virgin olive oil and much passion, this is my faith for the kitchen. I hope to cook one day for you, alongside you."
Typical Tuscan lunch or dinner, four courses with matching wines
Vegetable pie with sauce, salami and cheese, Homemade pasta with a sauce, Meat with spices and baked vegetables, Chocolate salad, All courses will be paired with local wines produced at Borgo Villa Certano. The ingredients depend on the season, they are mostly local and organic. I work with flours of ancient grains, with very little gluten. I do not use butter but extra virgin olive oil.
